When you bite into a crunchy almond, you are not simply eating an ordinary snack. You are taking in one of the most complex and concentrated forms of nutrition nature has ever produced. Although almonds (Prunus amygdalus) are often seen merely as an energy-rich food, their true value lies not in their calorie count but in their exceptional quality. They are a masterpiece of biochemistry, combining heart-healthy fats, high-quality plant protein, and complex carbohydrates with a low glycaemic index. Overall nutritional profile: energy packed for the road
Almonds are defined as a nutrient-dense food. A typical almond contains on average 575 to 598 kcal per 100 grams. This energy, however, is stored in a very stable form, aided by a naturally low water content that in ripe kernels stays at just 3 to 6 %.

Fats and the fatty acid profile: why almonds are the king of healthy fats
Fats make up the largest and most important component of the almond kernel. The total lipid content ranges widely depending on the cultivar, from 44 % to 61 %. These lipids are not loosely dispersed within the cell but are safely stored in intracellular lipid droplets (oleosomes) measuring 1 to 3 micrometres in diameter, coated with a protective layer of phospholipids and specific proteins called oleosins.
What makes almonds a true "king" is not the amount of fat but its composition. From a medical standpoint, the fatty acid profile of almonds is exceptionally favourable:
The dominance of oleic and linoleic acid
Two fatty acids absolutely dominate almond oil, together making up roughly 90 % of all the fat in the kernel:
The O/L ratio (oleic/linoleic) as a quality indicator
Scientific studies show that although the combined content of these two acids is stable, their mutual ratio (O/L) varies strongly between individual cultivars. This ratio is a critical indicator of quality. Linoleic acid (PUFA) is far more prone to oxidation (rancidity) than oleic acid (MUFA). Therefore, almonds with a high O/L ratio (that is, with a strong predominance of oleic acid) show much higher oxidative stability, have a longer shelf life, and are more resistant to deterioration during storage.
Protein: amandin and the building blocks of life
Almonds are an excellent plant source of protein. The total protein content ranges from 14 to 26 g per 100 g of almonds (on average around 21.2 g). An interesting point from the perspective of food chemistry is that to calculate protein content from total nitrogen, almonds do not use the standard conversion factor of 6.25 but a specific factor of 5.18, which prevents overestimating their actual content.
Amandin: the main storage protein
As much as 88 – 91 % of the protein in almonds consists of globulins and albumins. The absolute ruler of the protein profile is a globulin called amandin (or almond major protein – AMP). Amandin belongs to the 11S legumin class and accounts for roughly 65 % to 70 % of the total soluble protein in the kernel. It is a large molecule (a hexamer) with a molecular weight of around 450 kDa, held together by disulphide bridges. It is worth noting that amandin (specifically its glutamine-rich region) is the main allergen responsible for food allergies in sensitive individuals.
Amino acid profile
In terms of amino acid composition, almonds are an exceptionally rich source of arginine (up to 2.46 g per 100 g), glutamic acid, and aspartic acid. The high arginine content is a major health benefit, because in the body arginine is a precursor of nitric oxide (NO) – a powerful vasodilator that widens the blood vessels, lowers blood pressure, and prevents platelet aggregation. On the other hand, the limiting (deficient) essential amino acids in almonds are methionine, cysteine, lysine, and threonine.
Carbohydrates and fibre: energy without glycaemic spikes
Although almonds contain roughly 19 to 22 % carbohydrates, their composition is ideal from the perspective of modern dietetics. Almonds are a food with a very low glycaemic index.
Sugars and starch
Almonds can boast the claim "naturally low in sugars." The total content of soluble sugars is only 3.9 to 5.5 g per 100 g. The absolutely dominant sugar is sucrose. Other sugars such as glucose, fructose, raffinose, and sugar alcohols (sorbitol, inositol) are found in ripe kernels only in trace amounts. Starch, which is common in other crops, is almost absent in almonds (less than 1 g per 100 g).
Fibre: the architecture of cell walls
What makes up most of the carbohydrates in almonds is fibre. Total dietary fibre accounts for 11 to 14 % (on average 12.2 g per 100 g). The fibre in almonds is predominantly insoluble and forms the very architecture of the cell walls (cellulose, hemicellulose, lignin, and pectic substances).
