How to preserve the most valuable antioxidants in fruit and vegetables when canning, cooking and baking

A bowl full of fresh blueberries, dark cherries, or a deep purple head of red cabbage is a feast for the eyes. That deep, striking colour isn't just a quirk of nature - it's visible proof of anthocyanins, some of the most powerful antioxidants known to science. Researchers sometimes call them the “pigments of youth”. They protect blood vessels and the brain, and help calm inflammation in the body.

But what happens to that purple power once cherries go into a jar and red cabbage goes into boiling water? Anthocyanins are remarkably fragile, and without knowing a few basic rules, homemade compotes and cooked vegetables can end up as a pale shadow of their original strength. Let's look at how to protect this purple treasure while canning, cooking and baking.

What anthocyanins are, and where to find them

Anthocyanins are water-soluble pigments that give a wide range of crops their red, blue and purple colour. Health-wise, they act as free-radical scavengers, protect DNA from damage, improve blood vessel elasticity, and show strong anti-inflammatory effects.

Anthocyanins act as free-radical scavengers, protect DNA from damage and improve vessel elasticity. Scientific studies also credit them with strong anti-inflammatory and anti-cancer effects (Muzamail et al., 2025). Unlike carotenoids, which tolerate heat fairly well, anthocyanins have two major weaknesses - they are water-soluble and extremely sensitive to heat and pH changes (Nayak et al., 2015).

Canning: the anatomy of a fruit compote

Canning cherries, sour cherries, blueberries or raspberries is a deep-rooted tradition. Scientifically, though, it's a process that puts anthocyanins through a tough test.

Heat destruction

During sterilisation at 80 to 100 °C, anthocyanin molecules become damaged - heat opens up their chemical structure (the so-called pyrylium ring), and the pigment turns into colourless or brownish compounds called chalcones (Nayak et al., 2015). That's why compote fades over time. Heat processing of berries can result in a loss of 20 to 80% of the original anthocyanin content, depending on temperature and processing time.

Leaching into the syrup

Since anthocyanins are water-soluble, during canning and storage they migrate heavily out of the fruit cells and straight into the sugar syrup (Alshallash et al., 2023). If you eat only the fruit after opening the jar and pour the syrup away, you're throwing out a large share of the antioxidants that leached into it.

How to save your compote

Acid as a shield: citric acid stabilises anthocyanins and protects them from heat destruction - add it to the syrup.

Drink the syrup too: the syrup from a dark compote is packed with antioxidants, so don't pour it away.

Store cold and dark: light and room temperature speed up degradation - compotes belong in the darkest, coldest part of your cellar.

Cooking and baking vegetables: how not to sabotage red cabbage

While fruit is usually canned, purple vegetables - red cabbage or purple potatoes - are most often boiled, braised or baked. This is where the treachery of water fully shows itself.

Worst-case scenario: boiling in water

If you chop red cabbage or purple potatoes and boil them in a large amount of water, anthocyanins leach heavily into the cooking water - losses can exceed 50%. The vegetable ends up faded and stripped of antioxidants (Nayak et al., 2015).

If you bake purple vegetables in the oven or cook them in the microwave with minimal water, the leaching effect is largely eliminated. Heat will still cause some anthocyanin degradation, but losses are substantially lower than boiling in water, because the pigments have nowhere to escape and stay within the plant's structure.

How to save purple vegetables

Vinegar or apple: an acidic environment stabilises anthocyanins immediately, so cabbage keeps its deep colour even after braising.

Steaming: minimises direct contact with water, which significantly reduces antioxidant leaching.

Watch out for eggplant

Eggplant's anthocyanins (mainly a compound called nasunin) are found exclusively in its dark skin - the flesh contains none. If you peel an eggplant before cooking, you lose all of it. Always cook and eat it with the skin on.
